Cold Bean Salad

 

4 cups water 1/2 cup northern beans
1/4 cup olive oil 4 cubed carrots
2 minced garlic cloves 1 pound cubed potatoes
1/4 cup lemon juice 2 chopped, medium peppers
4 oz. tomato sauce 1/4 cup chopped parsley
1 thinly sliced sweet onion
 

Cook beans for an hour. Add carrots and potatoes then cook them for 10 minutes more. Drain and combine all of the ingredients. Place in the refrigerator to chill. Serve!
