| 4 cups water | 1/2 cup northern beans |
| 1/4 cup olive oil | 4 cubed carrots |
| 2 minced garlic cloves | 1 pound cubed potatoes |
| 1/4 cup lemon juice | 2 chopped, medium peppers |
| 4 oz. tomato sauce | 1/4 cup chopped parsley |
| 1 thinly sliced sweet onion | |
| Cook beans for an hour. Add carrots and potatoes then cook them for 10 minutes more. Drain and combine all of the ingredients. Place in the refrigerator to chill. Serve! |
